Chocolate Zucchini Muffins

Been waiting to share this one with you for a while….love love love ’em…I go through fits and starts when it comes to savoury/sweet cravings but these Chocolate muffins are one of my staple freezer foods! They are made with plenty of green zucchini/courgettes but taste so chocolatey and moist, they are really lovely, I enjoy them especially after a good workout or with a cup of coffee mid afternoon, really hits the spot and they freeze so well.

And YES chocolate is good for you!!! Remember Cacao is a Superfood with some amazing qualities. Cacao Powder is the purest, rawest form of chocolate you can buy and I love it!. Believe it or not it actually aids weight loss (because of its high chromium and coumarin content), can prevent tooth cavities  and it regulates blood sugars which is beneficial for diabetics and also helps to prevent cravings. Raw Cacao benefits the heart and the entire cardiovascular system as a whole and is filled with antioxidants.

Both cacao and cocoa are highly nutritious for you and are sure to satisfy your chocolate cravings. If you want more nutrients, choose cacao, but if you want fewer calories and a good source of antioxidants,  then use cocoa powder. So here I have used the darkest Chocolate chips I can find, ideally cacao nibs to benefit from the purest goodness, then pure cocoa powder to minimise calories and  along with all the goodness from the Zucchini this makes the healthiest, bestest ever for you chocolate muffin!!!! Makes 18 Muffins

  • 3 Cups of grated Zucchini/Courgette, with all excess water squeezed out
  • 2 Eggs
  • 1 Scoop Chocolate whey protein powder
  • 1/2 Cup fat free greek yogurt
  • 1/4 Cup Xylitol or other powdered sweetener of your choice
  • 2 Heaped Tsp Unsweetened Apple Sauce
  • 1/4 Cup Olive Oil
  • 1/3 Cup Plain Cocoa Powder (Dutch is the purest with least calories)
  • 2 Tsp Baking Powder
  • 1/4 Tsp Salt
  • 1 Tsp Vanilla Essence
  • 3/4 Cup Oats
  • 3/4 Cup Flour (Oat, Wholewheat, Buckwheat or mixture of two works fine)
  • 1/2 Cup Dark Chocolate Chips or Cacao nibs
  1. Pre-heat the oven to 350F and ensure all the water is squeezed from the Zucchini
  2. Beat the Eggs and Xylitol together in the food processor.
  3. Add all other ingredients apart from the zucchini and chocolate chips and mix together
  4. Add the Zucchini, mix againchoc zucc mix
  5. Fold in the chocolate chips manually and pour into paper muffin cases
  6. Sprinkle with unsweetened shredded coconut and a few chocolate chips or nibs if you wish and place in the oven. Bake for about 30 minutes or until a skewer comes out cleanpremade choc zucchini
  7. Remove and leave to cool on a wire rack and either serve or freeze and….enjoy…x
